We Have Friends Who Limit Sugar In Their Diet

And I love just about all of them, as I do just about everyone. I cook for them too, as evidenced by this tasty dessert, which is actually just mixed and not cooked.




Common sense tells me the following statement needs to be included, so here is some boilerplate for you guys to consider:

I love a tasty bowl of chilled ripe banana slices, creamy pudding, cookies and whipped white stuff, AKA Banana Pudding.

When we were kids, Mom made the old-fashioned kind that required a stove to make real pudding, Jacks Cookie vanilla wafers, bananas cut from the large stalk, hanging on the street side of the fruit stand on the corner of N Mill Street and Amite Street across from the railroad warehouses (anyone remember the name of that fruit stand?) and real whipped cream. It seems I remember when Dream Whip came out and Mom's recipe began to change.


Dream whip was popular when it hit the grocery shelves, but not as good as the real stuff. Cool whip makes a sugar free product now that is very much better than Dream Whip but still not actual whipped cream.

The recipe here is my wife's recipe for making pudding for a good friend who is a diabetic. It makes a very nice, easy to make low sugar pudding. It is so good; it is what we make pretty much all the time now.

Low Sugar Banana Pudding

Ingredients:

1 Sugar Free Jell-O Banana Pudding 1.5 oz. (instant no-cook pudding)
1 Sugar Free Jell-O Vanilla Pudding 1.5 oz. (instant no-cook pudding)
1 Sugar Free Cool Whip 8 oz. defrosted
4 cups Skim Milk (2 per box of pudding)
Ripe Bananas – 3 - 4
1 package Sugar Free Shortbread Cookies (I have never seen sugar free vanilla wafers) 







These are available at most grocery stores. They look like Jack's Cookies and taste pretty good. It is off topic, but the cookie like these that Jack's made was my favorite Vacation Bible School treat at Boling Street Methodist Church, dipped in Cherry Kool Aid. The hole in the middle is to stick your finger through as you nibble around the edges.

Back to the post.

Directions:

Mix Banana Pudding and Vanilla Pudding to package directions. I like to mix them separately and the combine in the finished dish.






In a suitably sized bowl, mix the banana pudding, vanilla pudding and Cool Whip.




Layer the container with a layer of pudding, a layer of cookies, a layer of sliced bananas, and repeat until all components are used – hopefully at least two layers, with one last layer of pudding.  










Store in the refrigerator with a cover. The dessert will pick up food odors and flavor and should be stored with a lid.

My wife, who has a degree in Nutrition, says the dish is "Low Sugar". I am a retired Microbiologist and Biochemist. All that qualifies me to be able to say is "It Tastes Great".

I love the idea of the sugar free shortbread cookies. I "cook" for a diabetic, have for 25 years. One BIG trick I use to cut down on sugar/carbs is replacing milk (even skim) with Half and Half (I use Kroger brand). This will work in any recipe that calls for milk. Trust me, it's a game changer for those who watch their sugar and carb intake. javascript:;

Your recipe as written calls for 3 boxes (1 banana, 2 vanilla) of pudding but only 4 cups of milk. Is it 2 boxes or 6 cups?

Am going to try this one. ‘Nana pudding is my comfort food but don’t indulge much because I try and avoid sweets. This might be a game changer!

If you want to take this up a notch....try sugar free chocolate chip cookies. I like the shortbread cookies as well as the vanilla wafers but chocolate chip really ads a new dimension .

I’m going to try this as I am also trying to cut back on sugar intake. My mam-maw taught me to make her old fashioned banana pudding after I got married. As we stood at the stovetop for what seemed like forever stirring the custard she scoffed as she explained that some people make it with that “ole instant puddin” that is not as good. I laugh now when I run across the instant versions. Sometimes convenience wins the day but scratch made is better when time permits.

Thank you! I'm the diabetic who wrote in a few days ago to request recipes that I could enjoy. I have been looking for just such a banana pudding recipe for going on ten years. Can't wait to try this. Please continue to publish sugar-free recipes every once in a while. When I was diagnosed, I was stunned to learn of the vast numbers of us out here who need these recipes.

My quantities of pudding used were wrong. It should be 1 vanilla and 1 Banana with the milk indicated (2 cups per box of pudding).

Sorry for the mistake. I corrected the post to show 1 box vanilla and 1 box banana.

Trollfest '09

Trollfest '07 was such a success that Jackson Jambalaya will once again host Trollfest '09. Catch this great event which will leave NE Jackson & Fondren in flames. Othor Cain and his band, The Black Power Structure headline the night while Sonjay Poontang returns for an encore performance. Former Frank Melton bodyguard Marcus Wright makes his premier appearance at Trollfest singing "I'm a Sweet Transvestite" from "The Rocky Horror Picture Show." Kamikaze will sing his new hit, “How I sold out to da Man.” Robbie Bell again performs: “Mamas, don't let your babies grow up to be Bells” and “Any friend of Ed Peters is a friend of mine”. After the show, Ms. Bell will autograph copies of her mug shot photos. In a salute to “Dancing with the Stars”, Ms. Bell and Hinds County District Attorney Robert Smith will dance the Wango Tango.

Wrestling returns, except this time it will be a Battle Royal with Othor Cain, Ben Allen, Kim Wade, Haley Fisackerly, Alan Lange, and “Big Cat” Donna Ladd all in the ring at the same time. The Battle Royal will be in a steel cage, no time limit, no referee, and the losers must leave town. Marshand Crisler will be the honorary referee (as it gives him a title without actually having to do anything).

Upon leaving the Entergy tent, fig leaves will be available in case Entergy literally takes everything you have as part of its Trollfest ticket price adjustment charge.

Donna Ladd of The Jackson Free Press will give several classes on learning how to write. Smearing, writing without factchecking, and reporting only one side of a story will be covered. A donation to pay their taxes will be accepted and she will be signing copies of their former federal tax liens. Ms. Ladd will give a dramatic reading of her two award-winning essays (They received The Jackson Free Press "Best Of" awards.) "Why everything is always about me" and "Why I cover murders better than anyone else in Jackson".

In the spirit of helping those who are less fortunate, Trollfest '09 adopts a cause for which a portion of the proceeds and donations will be donated: Keeping Frank Melton in his home. The “Keep Frank Melton From Being Homeless” booth will sell chances for five dollars to pin the tail on the jackass. John Reeves has graciously volunteered to be the jackass for this honorable excursion into saving Frank's ass. What's an ass between two friends after all? If Mr. Reeves is unable to um, perform, Speaker Billy McCoy has also volunteered as when the word “jackass” was mentioned he immediately ran as fast as he could to sign up.


In order to help clean up the legal profession, Adam Kilgore of the Mississippi Bar will be giving away free, round-trip plane tickets to the North Pole where they keep their bar complaint forms (which are NOT available online). If you don't want to go to the North Pole, you can enjoy Brant Brantley's (of the Mississippi Commission on Judicial Performance) free guided tours of the quicksand field over by High Street where all complaints against judges disappear. If for some reason you are unable to control yourself, never fear; Judge Houston Patton will operate his jail where no lawyers are needed or allowed as you just sit there for minutes... hours.... months...years until he decides he is tired of you sitting in his jail. Do not think Judge Patton is a bad judge however as he plans to serve free Mad Dog 20/20 to all inmates.

Trollfest '09 is a pet-friendly event as well. Feel free to bring your dog with you and do not worry if your pet gets hungry, as employees of the Jackson Zoo will be on hand to provide some of their animals as food when it gets to be feeding time for your little loved one.

Relax at the Fox News Tent. Since there are only three blonde reporters in Jackson (being blonde is a requirement for working at Fox News), Megan and Kathryn from WAPT and Wendy from WLBT will be on loan to Fox. To gain admittance to the VIP section, bring either your Republican Party ID card or a Rebel Flag. Bringing both and a torn-up Obama yard sign will entitle you to free drinks served by Megan, Wendy, and Kathryn. Get your tickets now. Since this is an event for trolls, no ID is required. Just bring the hate. Bring the family, Trollfest '09 is for EVERYONE!!!

There will be a hugging booth where in exchange for your young son, Frank Melton will give you a loooong hug.
