In honor of Pippin, and lest we forget the suffering he was forced to endure after he learned there would be no “second breakfast”.
All of those from Middle Earth experienced considerable hardships in their quest to destroy the Dark Lord Sauron's, “One ring to rule over all of the other rings” in the fires of Mordor's Mount Doom. We learn of the anguish Pippin was forced to endure when he learned there would be no second breakfast, the first morning of their quest, when Aragorn insisted the band get moving. After Aragorn's demand, Pippin asks about breakfast. When Aragorn tells him they have already had it, the Hobbit replies, “We've had one, yes. What about second breakfast?” Pippin then lists other hobbit meals he expects to eat each day after breakfast and second breakfast. The other segments of his meal schedule included elevenses, luncheon, afternoon tea, dinner, and supper. In Pippin's mind, Aragorn had no understanding or appreciation of proper meal scheduling for Hobbits.
As for me, I love a man who knows the proper times for eating and is committed to observing them. In my daydreams any good day should follow a strict culinary schedule. My daydream of a good day would start with a simple “Egg in the Nest” and not long afterwards, a healthy second breakfast to make it possible to survive until elevenses and then we would go forward to the other meals from there.
As the story goes, Pippin was forced to adapt to the rules Aragorn demanded for everyone who chose to go on the quest.
In honor of Hobbits everywhere, this post is intended to share a great “Second Breakfast” or maybe a nice “elevenses” with you guys.
Sausage,
carrot, mushroom, onion, rice, spinach, and egg squares.
Let's
just call them “SCMORSEs”.
Ingredients:
A
bit of Sage Sausage
1/4 medium Carrot, diced
Several mushrooms,
sliced and diced
1/4 cup of Onion, Diced
1/4 cup of dry rice
1
cup baby Spinach leaves
2 eggs
1 Tablespoon flour
1 cup
heavy cream
1 Tablespoon Butter
Salt, Black Pepper to taste
Directions:
I
had about half of a one-pound chub of sage sausage in the freezer
that I defrosted.
I
added the onion, carrot, and mushroom to the browned sausage, and
cooked them for a few minutes with a lid, until the carrot began to
soften.
Then I stirred in the Tablespoon of flour, some black pepper, and heavy cream.
Next, I stirred in the whole spinach leaves.
By this time, the rice was cooked.
I added three Tablespoons of heavy cream to the eggs, whipped them with a fork and added a little more black pepper.
I transferred the cooked sausage and vegetables to the rice, stirred everything together and the stirred in the egg mixture.
I covered my oven dish with foil and cooked for 30 minutes at 350 degrees f. Then I soaked up some of the oil from the top with a paper towel and put it back into the oven with no foil over the dish for 10 minutes.
Time to cut into squares and eat.

Looks good. It's a breakfast casserole with rice instead of stale bread to soak up the egg mixture.
